How Are French Fries Made in Factories?

French fries are a common snack found in restaurants, fast-food outlets, and the frozen food sections of supermarkets. However, what we typically encounter are factory-processed semi-finished or finished products. So, how are french fries made in factories? 1. Potato Washing and Peeling
During the harvesting process, potatoes accumulate significant amounts of soil, grit, and other impurities; therefore, they are typically first run through a washing machine to ensure the raw material is clean. Once washing is complete, the potatoes undergo peeling. Of course, some facilities opt to use unpeeled potatoes directly.
2. Cutting into Strips
The processed potatoes are conveyed to a strip-cutting machine, where they are rapidly cut into uniform, elongated strips. Depending on market demand, the potatoes can be cut into various specifications, such as 7×7 mm, 9×9 mm, 10×10 mm, and others.
3. Blanching
Blanching involves briefly heating the potato strips in hot water. Its primary purposes are to remove a portion of the starch, prevent the potatoes from oxidizing and turning black, and enhance the quality of the subsequent frying process. Potatoes that have undergone blanching exhibit a more uniform color after frying.
4. Dewatering
After blanching, the surface of the french fries retains a significant amount of moisture; therefore, a dewatering process is required. By utilizing vibration and strong airflow to remove this surface moisture, the occurrence of oil splattering during frying can be minimized.
5. Frying
Frying is one of the most critical stages in the processing of french fries, as it directly determines their color, texture, and flavor.
Factories typically utilize automated fryers for production. The fries pass continuously through a zone of hot oil within the fryer, completing the frying process in a short period of time.
The degree of frying differs between standard french fries and frozen french fries:
Standard french fries: Fried for a longer duration and are ready to eat immediately.
Frozen french fries: Typically undergo a pre-frying process, in which they are fried only to a semi-cooked state.
6. Oil Removal
This step is designed to remove excess oil from the fries; this not only improves their texture but also reduces the product's overall oil content.
7. Flash Freezing (A Specialized Process for Flash-Frozen Fries)
If the objective is to produce flash-frozen fries, a crucial step must be added following the frying stage: flash freezing. This process involves freezing the fries within an extremely short period of time.
 
Of course, in modern french fries processing plants, the aforementioned steps are typically carried out using fully automated production lines. This not only boosts production efficiency but also reduces labor costs, thereby helping enterprises generate greater profits.
