How to Make Cassava Chips Crispy?

We all know that cassava chips are made from fresh cassava through processes such as washing, peeling, and slicing. So how to make cassava chips crispy? Although the production of cassava chips involves multiple steps, the key factor that determines whether the chips are ultimately "crispy" is the frying process.

So, what precautions should be taken during the frying process to ensure that the cassava chips are crispy and evenly colored?
1. The appropriate slice thickness is fundamental.
A thickness of 2–3 mm is generally recommended, as it ensures even frying and creates a good crispy texture.
2. Thorough blanching
Blanching after slicing removes starch from the surface of the cassava, preventing sticking during frying and resulting in crispier cassava chips.
3. Controlling the oil temperature is a crucial factor
Stable oil temperature control is the decisive condition for crispy cassava chips.
Generally, cassava chips are fried within an oil temperature range of 160℃–180℃.
If the oil temperature is too low: the cassava chips absorb too much oil, are not crispy, and are prone to becoming soft and soggy.
If the oil temperature is too high: the surface quickly caramelizes, but the inside is not completely dehydrated, affecting the taste and potentially producing a bitter taste.
4. Appropriate frying time
When using an automatic fryer, the frying time is typically 1–2 minutes, depending on the thickness of the cassava chips.
Too short a frying time will result in incomplete evaporation of internal moisture, making the cassava chips soft and not crispy; too long a frying time will make them hard and bitter.
5. Removing excess oil can also improve the crispiness of cassava chips.
After frying, the cassava chips must undergo a de-oiling process. De-oiling not only enhances the crispy texture but also improves the health attributes of the product.
 
To make the cassava chips crispy, every step of the process must be carefully controlled to ensure the quality of the finished product.
