Fried garlic flakes are a widely used food ingredient, and their processing is mainly carried out by a continuous frying line. A complete garlic flakes frying line typically consists of multiple pieces of equipment, which can be flexibly configured according to the customer's production capacity requirements and factory conditions. The core processing steps mainly include the following three stages:
1. Slicing the garlic
Slicing is the first crucial step in fried garlic flakes processing. A garlic slicing machine cuts the peeled garlic into thin slices of uniform thickness, typically within the range of 1–3 mm (adjustable). Uniform slice thickness is essential for subsequent frying.
2. Fried garlic slices
Sliced garlic pieces are conveyed into a continuous garlic flakes frying machine for frying. The fryer features an automatic temperature control system, ensuring stable and uniform heat transfer, allowing the garlic slices to be dehydrated and shaped in a short time.
3. Oil removal treatment
The garlic slices, after being fried, have a high oil content. The excess oil needs to be removed to reduce the oil content and improve the texture of the garlic flakes.

To ensure uniform color and crispy texture of the garlic flakes, the following aspects need to be considered during operating the continuous frying line:
1. Frying temperature control
Garlic flakes are very sensitive to temperature. It is generally recommended to control the oil temperature between 150–170℃.
2. Frying time matching
The frying time needs to be matched to the garlic slice thickness and oil temperature, typically controlled between 20 and 60 seconds. A variable-frequency speed-controlled conveyor belt allows for flexible adjustment of the garlic slices' residence time in the frying zone, ensuring consistent heating of each slice.
3. Raw material moisture content and pre-treatment
The freshness and moisture content of the raw garlic directly affect the frying results. It is recommended to use garlic of moderate maturity and free from mold to avoid uneven coloring of the garlic flakes.
